Brazilian scientists found that 96% of 53 skipjack tuna samples were infected with parasites, containing over 1,600 worms total, with the heaviest concentrations in the intestines and muscle tissue—the parts consumed by humans. The study identified two parasite genera, Trypanorhyncha and Anisakis, highlighting the need for improved sanitary inspections and prompt evisceration to prevent larvae migration to edible muscle tissue. While some parasites may escape detection in commercial fish processing, human infection from these parasites is rare.
